Comic Con 2007 Double-Chocolate Espresso Cookies

Here is the recipe I used to make the caffeinated cookies aka Double-chocolate espresso cookies:

Preheat oven to 375º

Mix these together thoroughly in one bowl:

2 1/2 cups pastry flour
1/2+ cup freshly ground espresso powder (go on, do it)
3/4 teaspoon baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
1/2 cup unsweetened cocoa powder

...and these in another bowl (mix the butter and sugar together then the eggs and other stuff. Use a hand mixer if you have one.):

1 cup unsalted butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
3 teaspoons vanilla extract
1 bag of semi sweet chocolate chips

then add the dry bowl contents to the wet bowl and mix thoroughly . Drop tablespoon size dough balls (hah!) onto un-greased cookie sheets and bake for 10-12 minutes or until they look uniformly dry but not burned. Makes 2-3 dozen. Dough can be frozen into bake-able portions and baked later.
